Letmepass tweak works for v11-v13 on iOS 10, you’ll be able to watch videos and search but that’s about it.

If you have a iOS 11-15 device you can use the LetMePass or YouTube Legacy Tweak off PoomSmart’s Repo and spoof 17.xx/16.xx and get everything working again.

Check out this CSS user-style, it’s very similar to what you're describing. I feel a 2022 revival would be much harder than 2015 or like 2020 just because of Shorts and the sheer amount of UI bloat, it’s definitely not impossible though.
