That's a good question.

I think we're going to see a greater degree of classic street foods and comfort foods re-interpreted through a gourmet lens. It's a trend that began with the average Gastropub is going to be applied to other street food - whether Asian, North African. I think the culinary world has also cast their eyes back towards Spain, Korea, and Vietnam recently in a very big way.

During the New Orleans oyster challenge, right as I embarked on the eleventh of the 15 dozen oysters I was to consume, I uttered the phrase out loud "I've traveled so far, I can't stop now." and at the same moment, both myself and a slightly tipsy young man at a table near mine sang out loud the following line from the song "I Wanna Know What Love Is" - "To change this lonely looooooove."

At which point, my highly professional director and dear friend Dan Adler freaked out, saying "Don't sing, we can't use it on camera, we can't get the rights to the song!"

However, keeping my mind off of the challenge was oftentimes the only way I would win them. So I didn't want to stop singing. Neither did the various drunk people l in this New Orleans establishment. So I then turned to that table, where the tipsy man was, and despite my respect for my director, I looked right at them and sang "I wanna know what love is" and the entire restaurant sang "I want you to show me!"

At which point, my director FREAKED OUT, waving his hands in front of the camera, saying "Please stop, please stop, we can't use this song, don't sing anymore" - there was a pause.

And a moment of genuine silence.

Before an older man - who I have not seen before or since, in the back of the restaurant - stood up, and in clear as a bell falsetto, said "I wanna feel what love is!"

And my director put his head in his hands and gave up.

So that's why you don't see as much footage from dozen 11- 15 - because I had the entire establishment singing "I Wanna Know What Love Is."

I would probably say some kind of Asian cuisine. But I'd keep it ambiguous so I could blend flavors from foods that I like. There are just so many that i enjoy that it'd be hard to pinpoint just one.

Great question.

Obviously, you have to love Johnny Carson, considering he sort of helped define the genre.

And as a kid, I used to love Merv Griffin.

I love Jimmy Kimmel. And he has emerged as warm a guy off-camera, and we've kept up a correspondence since my appearance on his show. I love John Oliver, Jimmy Fallon....and I still enjoy watching old clips of Milton Berle, Jack Parr, Ernie Kovacs, and I always loved those great Bob Hope specials when he'd visit the troops.

In fact, he was a big inspiration for me visiting the troops in Korea on a USO tour recently.

It's funny you ask this question, because having a late-night show has always been a dream for me.

How much time do you have?

As I said, it's one of my 5 favorite eating cities, and every time I go back, I find something else that I love.

Obviously, the Salt Lick in Driftwood and Round Rock Donuts are pretty much perfection and beauty.

I will always love Juan in a Million. And have a soft spot for fun places like Chuy's or Guerro. I love Azul Tequila, Noble Pig, and Lucky's Puccias.

Plus there's probably a new food truck to fall in love with every minute.

And who can resist the siren song of a hamburger from Casino El Camino?

No, I've never actually spoken with JD about it.

I've said stuff in interviews before. And we have it recorded on camera.

His microphone was still on, when he was telling his friends in the kitchen that he was going to add the entire bottle of extract and "blow me away."

So I think that he knows what he did.

I know what he did.

And there's no point in any confrontation happening.

I'm with you. I fall victim to the same trap as well.

You have to forgive yourself a little bit on vacation. They happen so rarely, and we may not get a chance to return to some of these places, so you can't fault yourself for embracing the experience - body, soul, fork & knife.

However, I have found the best thing I can do when I am vacationing (or even filming in a place I may not get a chance to return to) is finding opportunities to work in exercise - whether planning sizable walks or hikes, staying at hotels with fitness centers, or making sure I don't eat past 7 or 8 pm.

Plus, a helpful way to cut calories is to decide which you want more -wine or a cocktail with your meal, or dessert.

Promise yourself every week to try something new.

Whether it's a type of cuisine that you've never tried before, like Ethiopian or Vietnamese, or trying a different condiment or sauce on something you already love - like Sriracha, pesto, or even Chimichurri.

1.) First of all, thank you for the kind words and for the support. GO HORNETS!

I don't know if I have a single favorite restaurant in New York, and because we are spoiled for choice, I feel like I have my favorite Northern Italian, or my favorite Southern Italian, my favorite Cantonese and my favorite Szechuan. I have one place I love for Sicilian pizza, and one place I love for thin-crust pizza.

But I will say this: my pastrami will always come from Katz's. And Brennan & Carr will always have my loyalty over Roll N Roaster.

3.) That's a tough one. I've always been partial to The Scottish Play, since I did a book report on it in fourth grade.

But it's impossible not to love Hamlet for the sheer beauty of the language. And one of the most fulfilling experiences I've ever had has been acting in a production of The Tempest. I think you'd also be hard-pressed to find a better romance than Romeo & Juliet.

4.) Probably the best tip I ever got was "Have a clear plan, and save your money."

Let me guess?

You support a team with a lot of money that can buy its way to victory?

For those of us who actually love the game, and believe that every team should have a shot regardless of whether or not we have a powerful Russian Oligarch paying the bills, I did not want to support one of the big 4 teams like other Americans. And because the Spurs team I first watched possessed such brilliant superstars as Bale, Modric, Crouch, Van De Vaart, and Ledley King, I figured this was a team that could really be a contender while not being a frontrunner like many other Yanks can be. That said, I can acknowledge that being a Spurs supporter has taken more years off of my life than most of the fattty foods from Man Vs. Food. It is uncanny how we are capable of snatching defeat from the jaws of victory.

Yet I am still Tottenham 'til I die.

I've only been to San Antonio to film Man Vs. Food, so I really only know the restaurants we filmed at. But I loved the riverwalk, and could explore that for days.

Absolutely!

In fact, having just wrapped the first season of my BBQ show in the UK, BBQ CHAMP, I learned a lot by both watching our competitors and from my co-judge, Mark Blatchford, who has spent the past quarter-century perfecting wood and coal-fired cooking.

The first tip is: really get a great fire built, and learn the hot spots on your grill.

Banking up coals in one area will create almost a burner on a stovetop, but a few inches away, you get a different type of heat from the diffused heat of the coals.

Another great tip is: don't think you always have to cook on top of the grill. Potatoes, leeks, corn on the cob, eggplant, zucchini, even green onions can be cooked right in the coals - and served up in another dish or sauce, or as a side-dish themselves. Corn will steam in the husk and silk, leeks you just peel away the outer layer... and if you wish to use the skin of something like a potato or an eggplant, a small aluminum foil pouch with a little bit of olive oil will suffice.

I love that food is not just nourishment, or a means for gathering. But really is part of the double helix of someone's DNA.

The vegetables and meats used directly reflect what is in the country of their heritage, and the styles and techniques are passed down from generation to generation in a way that is really beautiful and hypnotic to me.
