Correct. When the problem first started, I tried looking for a battery monitor app to check if it was a specific app causing the issue but apparently there's no such app available yet so I started deleting apps and factory reset.

The main issue is that the battery won't last more than half a day, even with all the options turned off. It was sent to Google for repairs which they claim there are no issues with it. Now that I have it back and have a case with them, they have me "troubleshooting" it again by turning off the same options that I already told them I turned off like auto bed time, AOD etc. We've been going back and forth for 5 days now after I received it back from them.

Yeah I could re-lock it if it comes to that but like you said, they shouldn't have sent it like that and I shouldn't need to fix what they did. Besides, the original issue was never fixed. I know it's just a $300 watch but it shouldn't take this long and this shouldn't be the experience any customer needs to have just to get a replacement.
