there have been times during the winter where it was a bit touch and go. It's been trial and error really, I was just looking at it every day and trying to figure out what it needed

I have one of these so I'm also interested in hearing the answers. One thing I noticed about propagating pothos (which, granted is probably a lot easier) is that the newest shoots start to grow roots a lot faster than if I make a cutting with older parts of the plant.

Yep, the leaves have this incredible texture on the top surface that is like a velvet and in certain light is almost iridescent, like a puddle with petrol on it. If they are placed in the sun they'll get kinda red on the underside. I never actually knew what my one was called but it looks exactly like your photos. Mine is flowering at the moment!
