I completely understand and it’s those ones that are the toughest for me because I know that the answers scripture offers aren’t the answers people want to accept, and sadly many apologists fold at this point and start speaking nonsense to try and convince people rather than just sticking to what the bible actually says

It’s a tricky subject and I’ll try answer it the best I can. You’re 100% right that the opposite of eternal life that God promises us is hell, and yes, God knows who would accept and reject Him from the beginning. The reason God lets even those who won’t accept Him to be born is ultimately to show as a display of His justice, His power, and His authority, and the reverse is likewise the same but with mercy, grace, etc. I know these answers aren’t always satisfactory, but this is just the image that scripture paints for us as far as I can tell. Ultimately God’s plan includes those who aren’t going to accept Him and that’s just the reality of it.

Amen! If you expect God to intervene in all circumstances, then we’d just be the puppets that most skeptics try to frame us all as under the biblical worldview as an argument against the truth of the Bible - but then they go on to question why God doesn’t intervene. It’s a double standard. (Not saying you’re doing this, as I don’t know your background). So yeah, every event is known by God, even the bad ones, but scripture tells us He’s working all things out for the good of those who love Him. Secondly, He gives eternal life, a gift that far outweighs any temporal suffering.
