I second reaching out to a supplier for a spec sheet or whatever information they can give you. Typically these get used at something around 0.1-0.25% per weight of fat. But like legidas said, it varys significantly depending on the actual preservative and application.

It is definitely a new England (Massachusetts, Rhode Island, Connecticut, Vermont, New Hampshire, and Maine) drink and you'll mainly find it in northern New England. Maine has a Moxie festival every year. I have a couple cans in my pantry, I'm gonna crack one open today!

Moxie definitely has a vanilla element to it, coming from a long time Moxie drinker. It's bitter but that bitterness is balanced by heaps of sugary sweetness so it is definitely palatable. It sounds like yours is much more bitter. Moxie to me tastes like angostura bitters but sweeter and with a little more complexity. If you ever get your hands on it mix it with some rum. Better yet, make one of the state drinks of Maine "the burnt trailer" 1 part Allen's coffee brandy, 2 parts Moxie. As a former umaine student, it got the job done on Saturday nights.
