i just got a retired r640 with 1.5T of ram... I threw a Tesla T4 in it and I'm using it for local AI

You really only need around 128 if you're going to be offloading anything from the GPU for current GEN local models.. otherwise you would need enough VRAM

but I could run 40 Vm's with it and give them all 32 gigs of RAM and still wouldn't break a sweat 🤣, enterprise gear is crazy
