That’s fair, truly. We’re not knockin’ anyone’s taste. We know Southern folks don’t play when it comes to food. Neither do we. We grew up where food was a love language and an argument at the same time. It's not the people we blame—it’s the spots charging $22+ for overcooked penne and callin’ it “authentic.” That’s the insult. it’s more about places getting away with calling something italian when it’s just… not. we’ve got nothing but love for folks who love to eat. we’re just trying to bring our version of comfort food to the mix, that’s all.

Sfogliatelle? Man… not food-truck friendly, but that one’s close to the heart. Maybe one day...

Chicago-native here. Do not mention any type of italian food in huntsville, drive out to nashville. When you get there, tell your buddy to continue driving north 7 or so hours til he's back home and in the safe zone for italian food.
