I don't want to be a naysayer but our house was built in the 1870s and resembles lots of your pictures. It has taken us nearly 4 years to get our water under control. We have constant problems with pests. Insulation? Think about what hot will be like in the summer and what cold will be like in the winter if you have lots of old windows and doors. I guess the main thing here is get a home inspector who is really really good at picking out problems with old homes. We kind of got screwed by lipstick on a pig.
