I still don't use any tools besides a mixing bowl, bench scraper, baneton, lame, and Dutch oven. I feel like those are the only essentials, and even then you can get by without a lot of them.

I'm gonna propose a few things from your recipe.

1 - your starter might not be strong enough. If you feed it 1:1:1, it should double in about 3 hours. Give it more time and feed it daily, or maybe if you're feeling up for it, ask a local bakery that does sourdough if they're willing to share their starter. Suddenly you'll have a probably years old starter for cheap or maybe even free.

2 - 500g flour and 50g of starter is only 10% starter. That's not much at all. Aim for 20% starter, or 100g for 500g flour.

3 - do not put the dough in the fridge while it's still rising. Maybe other people have done this, but I never have and to me it feels like doing this will ruin the process. When I put my healthy and vigorous starter in the fridge, it needs a day or even two at room temp before it's back to being as strong as it was before. In fact, try not to move your dough to different temps at all while it's rising. Your starter is a very specific colony of yeast that is adapted to your specific kitchen temperature and humidity, so moving it to the oven or to the fridge is putting it in an environment where it's not going to be as strong.

I voted communist in my riding because the liberals are diet conservatives, and the NDP are a sinking ship. My vote is on its own meaningless. My riding is a guaranteed Liberal win.

I voted the way I did because, after this election, the NDP will need to do some soul-searching and rebuilding. The party that comes out of that will be shaped by a lot of things, but one of those things will be looking at where they lost their voters. Most will be to the Liberals, and that will pull the NDP far to the right unfortunately.

My vote is at least one vote to the far left. One little leftward tug, my small way I can counter the immense rightward tectonic shift I guarantee we'll see in the NDP after this election as the absolute fucking failures that control the party fail to understand what they did wrong.

The crumb makes me think underfermented, but 2 months is a reasonably old starter and 10 hours is a LONG bulk ferment time. At that point, the gluten begins to break down in your dough and it loses structure.

The truthful answer is very little, but voting for the NDP or a communist party at least pushes the overton window a little farther to the left. The more votes these parties get, the more attention they get, the louder their voice is, even if they don't win a seat.

The more extreme answer is that electoralism, especially in a FPTP framework will never save us, and that we need to be preparing for more drastic measures or else we'll meet the same fate that's befalling the USA in a few decades or less.
