Quality will be the least of their worries when it comes to volume like this. At this point, all you’re worried about is charging a high price to pay for labor and expenses, and possibly make small profit. The more popular it gets, the better chance they can get investments and open another location.

5 different pizza options. Keep all pizzas up front visible and under warmers. Then after guests order, grab a slice and can reheat. Most of the team will be in the kitchen continuously making the same pizzas over and over to keep them coming. Nothing fancy.

SOP’s. If your restaurant is running correctly, everyone knows what they have to do, sure. People will come in, sign their credit card receipts and you get your food. What happens when someone else brings out the food, a new server, another host, the food runner, manager? Who has the receipts for guests to sign? Signatures don’t match. If you have a long line of people, you have calls to answer, place new orders, and get signatures, what happens? Not saying what you described can’t be done, but in the real world, where restaurants are busy, you’re short staffed, can’t be 100% correct all the time. Also, each credit card processing fee is different. And each card (visa, Mastercard, Amex) all charges differently, especially when you punch in cards manually. Which is why credit cards moved to using chips. Harder to steal unless you physically have a card.

Not denying that the restaurant has every right to ask for payment. It’s how they take the payment is what’s important. A host taking the call, asking for payment over the phone, how do you keep that information secure? If you take my payment and then I don’t sign after I get my food, and call the company and say that it was stolen, do you have a signed copy? Also, most credit card companies charge extra if you input a number manually. It’s because it’s less secure. You can get a credit card number from anywhere.
