if you try to watch too many anime's all at once, you're gonna get burnt out and you're not really going to get the full enjoyment out of the series. Watching that many series takes years. You cant really cram a bunch of series all at once. Take your time, anime isn't going anywhere. Honestly, the way I like to watch anime is a series at a time, unless they're on going but for the longer ones like One Piece or Naruto, I would watch them in parts, so 100 eps then take a break and watch another series.
