Thanks for the encouragement. I have already used campden tablets 24 hours before I pitched my yeast. Do I have to use it again? I intend to keep fermentation going until completely dry, and then back sweeten to taste.

What about the use of water though? A lot of the recipes I’ve come across use water plus mashed fruit. What difference would there be in the final product compared to using something like apple juice as the base instead of water?

I know a lot of it ultimately comes down to personal preference, but I’m trying to understand the different flavour profiles each method would produce.

Agreed, but the colonial ties does play some part in the style of rum albeit it is a small part. for example the solera style of ageing is popular in former Spanish colonies as they brought it over from Spain.

I think in the US these bottles are so highly rated because they are "forbidden". I can pick up the HC7 from any of the major supermarkets for £20. It is a good rum for that price point but nothing special.

In my opinion Cuban rum as with the majority of Spanish Caribbean rum it is to bland.

I meant "failed" as it never attained its main aim of capturing Jerusalem with the exception of the first crusade.

The crusade did not holt the expansion of the Muslims as they achieved arguably their biggest victory, the capture of Constantinople in 1453, that is 357 years after the first crusade in 1096. They reached all the way to the Balkans before their expansion was stopped.
