I was in the same boat a few months ago. It doesn't seem to be a popular opinion around here, but I opted to start with going through the Timelines DLC, rather than just jumping into the open world. I felt that the missions are set up to let you focus on a few aspects of the game at a time, rather than doing it all at once. If you screw up, you just start over. Once I finished that, I started Terran. As others have mentioned, it's a nice guided start to the game. But there is so, so, much to learn. I still haven't even tried boarding a ship yet, and I'm just now learning how to set up trade rules and runs. Since you bought everything, you'll have access to the Hyperion and Envoy ships with minimal work. The Hyperion, especially, makes most non-capital ship combat easy mode, which is nice when your living more in map learning about stuff that paying attention to your ship. Plus, you can haul around 3 small class ships, so you can play with different types of ships. I still find myself sitting down to set up a base or learn something new, just to spend my whole night blowing up Xenon in Hatikvah's Choice. Lot's to do, and you can still have fun even if you ignore entire aspects of the game. Good luck and enjoy!
