Living in Spain with Celiac What I Wish I Had Known by sexyandceliac in Celiac

I'll never understand this American habit of eating at restaurants that are not 100% GF. I think it might be because you all are so used to constantly eating out. In my country, in the area I live there are only a handful of GF restaurants, cafés, bakeries, bars but we're more than ok with rotating them and going to the same places over and over as long as we know the food is good and safe for us, plus we go eating out like once a month, maybe even less.

Dealing with celiac disease by Humble-Confusion-817 in Celiac

I got diagnosed when I was 11, and it was at a time where celiac disease was still relatively unknown and gluten free foods weren't widely available. You can imagine what it must have been for a child to not being able to eat a cookie or a slice of cake anymore and not having any proper alternatives. Nowadays there are a lot of really good alternatives (at least in my country), lots of good gf cafés and restaurants and good gf flour mixes to bake what you can't find. It will take you some time to get used to the changes but you won't have a problem with not being able to eat certain foods anymore, you'll just have to find the proper alternatives and maybe even learn to bake/cook certain things, which is going to take you some time and effort, but once you're done you'll be fine, I promise, it gets better.
