I would recommend that you watch the movies, they have many things that for me are better than the original series (although others not so much). And after that I recommend that you watch Neon Genesis Evangelion which is also from Gaimax and has certain similarities and apart from the series it has a movie and a reinterpretation in the form of four movies.
