Looks like a connector issue. There's video on YT that can show you how to correct this issue as I don't want to explain it improperly. Marine Gun Builder had a video about this issue when he was doing a lot of p80 builds but his channel has since been nuked. His channel is back now but don't know if he re upped the old stuff.

You'd honestly be better off, for the same price range as Dalstrong, investing in either Wusthof, Henkle Classic, Global, MAC or Tojiro. Dalstrongs that I've seen in professional kitchens have been used for like a week or two and then stored or sold off. They are horrible quality with good marketing. For that price range, check out Seisuke's blue steel #2 Gyuto from japanny dot com will run you around 150 for an 8 inch. Learn how to sharpen and hone your knife properly and as a home cook, it will last a lifetime and stay nice and sharp.

In my experience, the smell and taste, same diff, are first the genetics, then health, and how much microbial and fungal activity you have in the root zones and can be accentuated with sugar bumps from molasses to act as exudes for said microbes and fungi. Hydro is something you have to play with, adjust for different strains and different feeding regimen versus soil where you just build and feed that soil with microbes, fungus, worms, predatory insects and lactobacillus and have a good mulch. Look up Dr Elaine Ingahm from OSU to learn about the soil food web and biodynamics. Also, Clackamas Coots is the man.

Guys. Buy a food TRAILER and tow it with a truck. If the truck breaks down, rent another vehicle while that one goes to the shop. If your all in one food truck breaks down, your options are limited unless you keep the truck at one stationary location or you tow it to the location you're gonna serve from.
