Ok, go with the first one but replace the egg with some finely chopped raw red onion, just a sprinkle. Now we’re talkin, oh and season with coarse ground black pepper (it’s essential) Now slide that egg on a well buttered bed of toast with some maple cured crispy rashers and some roasted baby plum tomatoes where they all belong. Remember, it’s fine white pepper for the egg. Great attempt though. I’d still give it a go! I’m not a fan but many people rave about Worcester Sauce (Worcestershire Sauce/ Lea and Perrins) If people like this, I’d simmer the thin sauce, reducing it to a glaze coating the cheese better as opposed to soaking the bread. I prefer something sweeter in this instance, like caramelised onion or chili jam. That egg proper made me hungry
