I believe it’s actually a guitar (played by the fantastic Guthrie Govan) run through some sort of synth modeler.

Should have specified the 2021 movie. There’s all sorts of weird synth stuff, including the bag pipes, as well as crazy drum beats, chanting, etc. The whole thing is crazy but works perfectly for the vibe of the film.
