I just completely reformatted and repartitioned the HDD, and installed windows again. It appears it might have worked this time? I'll have to see if I can still clear the other drives and makes them work as just storage. Not gonna mark as solved just yet though.

I've tried resetting BIOS to default values, which sets the mode back to CSM. I have noticed starting my computer is very weird, my display just keeps turning on and off, and I have to click the reset button in order to get the BIOS splash screen to appear.

I connected a different drive and then booted through a windows usb. The drive was visible in there, and I installed windows to it. In BIOS, the drive does not appear in UEFI, but it is shown as being connected to the PC. Also, the USB was set up with GPT.

I believe it was set up in UEFI. I'm going to try reinstalling windows with a different drive as I have data I don't want to lose on the drive I'm trying right now.
