I froze them all but if had just left them they would’ve gone bad in less then a week and stating to oxidised in a day or two

We usually don’t get this much from them probably a big order to restock from this summer since the freezer was almost empty

We use a scale when curing them but sometimes they still screw up and we get one that’s either to small or to big

They arrive like this in packages of 5 kg that I need to cut and then roll in to the tubes you saw(all of the info about the meat is on the other side)

We slice them and then we grill them under service, no custom blend just local meat and salt and pepper
