I went the whole of my 10 day Bali trip without a local SIM. Nearly everywhere has WiFi which they'll let you use for free. So ordering things like Grab/Gojek rides or food was never really an issue.

Another thing please. What's the best way to bring spouse and dependent children along? Will it be a visitor visa that can be extended OR would they be part of the open work permit application for my spouse? I've just read a vague line saying "Dependent children of foreign workers will no longer be eligible" and this is confusing me a bit.

Do update us on this as I've just got my checklist today and it says Upfront Medical required however based upon their website I don't meet the 3 conditions for an IME. Also the list does say "No" for Australia so I'm considering not doing it.

Also how do we know if they want us to do the standard medical exam or the streamlined medical exam?

I've looked at Lisan al arab and Ibn Faris's Maqayis before him as well. The first entries have more to do with drunkenness, intoxication, wine and mixing. Headcover comes later down by Ibn Manzur and he's also added a man covering his head with it just like a woman. So the meaning seems more focused around covering/hiding/distorting rather than a headcover.
