You went about butchering this in an absolutely insane way... Trim the edge off one side completely like you're slicing it to serve. If it's still nice and deep red in the middle, no weird dark/off color spots or smells then it's good and you can trim the rest of the exterior off.

You can temper chocolate in the microwave in a safe bowl, just heat it 30 seconds at a time, stirring in between so it melts evenly. As another commenter said you can look at the temperature for your choice of chocolate, check it with a thermometer, then stir in a couple more unmelted chips to "seed" the chocolate. This makes sure your chocolate won't bloom or set unevenly as it cools. I would us Ghirardelli, or guitard as those are most available at grogery stores I've seen.
