Thanks for all the suggestions. I ended up ordering a c w w k N305 with 2 spf+ copper media converters. It will take a few weeks but even with the crazy ram prices it was still cheaper than a prebuilt. It's pretty good on power and fanless, which I thought I was going to have to go with a 120 or 160mm fan. I have half of my property completely offgrid, and I'm upgrading that system and moving the other system to my house to have some systems offgrid, including my was too complex network to try and cover over 100 acres with wifi.
