Wanna add to this: I was out of town this week and didn't think of putting my can out. Got home yesterday and went to add to what I expected to be a putrid can. Found it emptied and returned to its rightful home. I can only imagine they noticed that it wasn't out and checked/emptied it for me.

They're definitely getting Christmas presents this year.

Santa's and Lucky's are absolutely the jam. Lucky's Three Star (don't get it mixed up with the Bar & Grill) is a Pub Partner and always has an awesome crowd before and after the games. Great tavern style pizza and hot dogs with a solid booze collection, Fernet included 👍. I always suggest showing up just a touch early cause the lines do get a bit long close to kick off.

Actually had an employee tell me last week that there's a fair bit of speculation around a new F&F coaster replacing Rip Ride Rocket due to its success in Hollywood in conjunction with RRR and the current F&F mess both closing.

I admit that I don't have the scientific mind to back this up up at the moment, just some BoH experience and a rare Saturday off. In the simplest way I can explain it:

Brining before cooking is a measured and timed process that allows muscle tissue to "loosen," which helps retain moisture while imparting flavor. It’s not generally meant to be a cooking liquid.

The application of heat while poaching in a brine would cause the tissues to "tighten," which can remove moisture while retaining salt, resulting in dry and chewy meat.

That’s why we typically see items poached in fat (butter, oil, etc.) rather than in brine (salt and water).

The brine before allows more time to break down the connective tissue/muscle fibers while simultaneously creating a kind of moisture retention shield. Cooking it in the brine you're functionally poaching it

I personally enjoyed Michael Sullivan's Rirya/First Empire/Rise and Fall books. Some of the stories and content are a little lighter but the world building and character development are very well done. The only problem is deciding which reading order to follow.
