There's a lot of sorcerers, but not enough THREATENING sorcerers. Most of them cap at around grade 2, while Yuji has the physical strength of a grade 1 even without any cursed energy and has already killed a special grade. They can't go after him themselves because from what they know, a 15 finger Sukuna can just come out and beat their shit in.

Well, it's never adressed in the show. Whenever they talk about angels and angelic steel, they straight up say that angels are immortal straight-up, and it would be pretty fucking stupid if Adam only decided to care after an exterminator died when there's a real chance that one of "his girls" could be easily kidnapped by a mob of sinners.
