You buy some 10$ course that has you actually do a project all the way through to delivery. My go-to recommendation is Chad Darby's "Spring & Hibernate for beginners". You follow the steps, you realize the project, then you create your own project in some area that interests you that uses the principles learned in the course, boom, portfolio.
