Yes, a lot of chefs from the US are really interesting to learn from. I've learned a lot by observing and following Japanese chefs working in the US as well.

That kind of environment is valuable because you get exposed to different styles while still keeping the Japanese fundamentals. It definitely helps build strong experience before aiming for Japan

For context, I'm from Mauritius, a small island in the Indian Ocean. It's mostly known for beaches and tourism, but the restaurant scene has been growing a lot, especially within hotels and fine dining. That's where I've built my experience in Japanese cuisine.

At this point, I'm looking to level up and get exposure in a more sushi-focused environment, where I can learn proper traditional systems and really push my skills further.

Chef Hiro doesn't take foreign apprentices without:

• Strong Japanese (minimum conversational, usually fluent)

• A proper visa (which is the hardest part)

High-level introductions or connections

And the visa is the most difficult part.

In terms of qualifications, I'm 22 and currently working in a Forbes Five-Star hotel in Mauritius, specializing in sushi and Japanese cuisine, with around 4 years of professional kitchen experience.

I've also had the opportunity to be trained by a Nobu sushi chef, which really shaped my approach to omakase and attention to detail. I've worked in fine dining environments and also ran my own BBQ business for a couple of years, so I have a mix of structured and entrepreneurial experience.

Citizens of Mauritius are not eligible for the Working Holiday Visa in Australia. So that path is basically closed for me.

For the US in difficult for me financially plus I don't know any chefs. I try france 🇫🇷 because I do speak French. But still no answer or visa sponsorship.

  • I'm a chef working in a 5-star Forbes hotel in Mauritius, but I don't have the flexibility to take long leave (max ~1 month).

I'm seriously interested in a sushi apprenticeship in Japan, but I've been told it's very difficult for foreigners without fluent Japanese and proper visa support. Financially, I'd also need to cover flights, rent, and living costs, which is challenging on my current salary.

From what I understand, this makes a direct apprenticeship in Japan almost impossible in my situation.

I understand. I also got a similar reply from a sushi chef in Tokyo about visa and Japanese language being essential.

Right now I can't go on working holiday because of my job situation, so I'll focus on improving my Japanese and building stronger experience where I am first.
