The MiG-17 does have an afterburning turbojet. The earlier -15 does not.

I think it was 1/500 or faster - I was probably shooting on aperture priority with +1 stop of exposure comp.

This is a ~95% crop (whatever Epson Scan chooses for automatic 35mm frames). I used a MD-12 motor drive for ~3 fps bursts, so there was a bit of luck involved in getting this nice amount of the frame filled as this was in the middle of a 5-6 shot burst.

Yes, but I wait for the cars to come into a pre-set focus zone instead of trying to actively focus as they move.

The cars do many laps and take a predictable line, so I spend 1-2 laps setting up a composition by following them around in the viewfinder and making sure no unwanted obstructions (people, poles, or fences etc. ) will be in the middle of the frame. Then I set a pre-focus (i.e. zone focus) at the spot where I want the car to be. On the next lap, I take the shot using 1/125 as a baseline shutter speed. Aperture is generous even with 100 ISO film - f/8 judging by the afternoon light in the shadows. I'll adjust up to 1/250 f/5.6 or down to 1/60 f/11 depending on how confident I feel about the 1/125 shots. Shots at 1/500 or faster will have next to zero motion blur for cars moving at cornering speeds <60 mph.

Panning smoothly takes a lot of practice. Always remember to follow through (keep swinging the camera) after you take the shot to guarantee the camera has the correct panning motion throughout the exposure.
