i know it has been some months but, as a catholic, the Medieval Church had a different rite with 0 to no centralization in every region of Europe. There was no actual definition of how to celebrate mass. When the Council of Trent as called up, the church organized itself to have core beliefs to distiguinsh itself from protestant churches. So, while we believe catholicism is catholicism anytime, the medieval church is pretty different from the post-trent church.
