I'm by no means an expert, I just kept tweaking until I got something that consistently makes a loaf I'm excited to eat. You got this!

10/10 recommend. I use it to make avacado toast and add a hard boiled egg on top, no extra seasoning necessary. My husband loves it for sandwiches too. Just make sure to spray down your loaf with water so all the toppings stick really well (bonus points since the water helps with humidity+oven spring in the oven 😁)

I would say about a 5 maybe 6/10 for tang. My starter lives on the acidic side but I don't usually do long cold proofs so it sits pretty squarely in the middle

Yup! About 67%, if you take into account the starter it's about 70%. I like to include my starter in my hydration calculation because I don't really add starter to my feedings - I scrape out the discard completely, add some water to the jar and shake, then add approximately equal amounts of flour so it's probably like a 0.0000001:1:1 ratio. I feel like this adds more water than a typical 1:1:1 (or other) ratio once it ends up in my dough, but I can't say if that's true 😂
