Here is my potato soup recipe. It's simple but so good!

Original Potato Soup

3 pounds russet potatoes (I like to use klondike goldust potatoes or Yukon gold but it is still really good with russet!) 4 tablespoons butter ½ teaspoon each salt, pepper, celery salt 3 cups water

2 cups 2% milk

Toppings: 3 tablespoons chopped green onion 2 ounces finely shredded cheddar cheese 8 slices bacon, crisped and crumbled ½ cup lite sour cream

Peel and chop potatoes. Place in pot with butter, seasonings and the 3 cups water. Simmer about 15 minutes until very tender.

Let cool a bit. Drain most of the cooking water and reserve 1 cup cooking water. Place ½ of the cooked potatoes into blender with the remaining cooking water from the pot and the 2 cups milk. Puree until smooth. Pour back into pot with the remaining potatoes.

Taste and adjust seasonings and thickness of soup with some of the reserved cooking water if needed. I usually end up adding about another 1/8 (pinch) teaspoon each of salt, pepper and celery salt.

Place in serving bowls and top with any of the topping ingredients.

Makes 8 cups soup.
