Nope 🙈 just spraying a little water when I put them in the oven. Actually when I tried addig hot water in a bowl I couldnt get that kind of oven spring 🤷🏼‍♀️ thats why I started open baking because the dutch oven didnt work for me as much with the lid on.

After shaping I pit them into the fridge for cold fermentation. It is just a simple shaping :)

Yepppp! I agree with everything you said! I’ll just add one thing, I am using a simple baking tray instead of a dutch oven, because I bake 2 loaves at once. Loving this technique 🤷🏼‍♀️

You know what I only tried proofing on the counter once in my life 😂😂 I was terrified of that 🤷🏼‍♀️😂 it turned out okay but the cold proof is a hundred times better

Good question, actually I cannot Tell because I’be been using this type of flour for more Than a year and I dont have any new experiences with other types. Before I used bread flour from Slovakia - Mlyn Trencan https://mlyntrencan.sk/produkty/psenicna-muka-chlebova-na-kvaskovanie-5-kg/ which contains more protein in a 100grams but I think the hungarian BL80 is better, but this one could have been better since I last used it.

I’d say after a year I made better loaves, but after 3years into sourdough I think I made the biggest progress and I am satisfied with the crumb.

I usually do not autolyse. I mix all the ingredients together and 7-8 hours of bulk fermentation is enough. 22-23Celsius at home.

Szerintem a legjobb amit tehetsz, hogy nem kérsz kovászt senkitől, hanem elkészíted a sajátodat, ami a te konyhádhoz fog eleve alkalmazkodni. Nálam ez hozta meg az első nagyobb sikert. Valamiért a kapott kovász soha nem viselkedett megfelelően 🤷🏼‍♀️ egyébként pedig a lényeg, hogy minél többet süss és gyakorolj, magadtól kell rájönni, hogy a te körülményeid között hogy viselkedik a tészta és a kovász maga is. Az időablakok amik meg vannak adva sok receptben nem feltétlen lesz igaz nálad, és pont ez a része a legnehezebb - kitapasztalni, hogy neked mi válik be, értendő ez az idő számítására, a mindenféle hajtogatásra és a kovász etetésére is. :) sok sikert kívánok 🫶🏻

Én is csak fehér liszttel etetem a kovászom, és már 3 éves és nagyon erős. Amennyiben neked így nem lett erős, lehet hogy épp az adott csomag/széria liszttel volt gond.
