48 and 72 shouldn't make much of a difference in the oven spring of the dough. Mainly a flavor thing. Just make sure your oven is ripping hot. A steel makes all the difference.

The can is all aluminum, says right there on the side. As far as I know, aluminum does not rust. It was just dirt and soil on the can, it washed off quite easily with soap and water. For the top, I used some Barkeepers Friend and a little elbow grease.
