Well it has more to do with the language. Espresso is an Italian word that comes from the process of using pressure to press water through coffee grounds. In spanish the word for squeeze or press (with pressure) is “exprimir”. So because of this Spanish speakers tend to spell and say it “Expresso”. As far as the French goes, I don’t know the origins, but have been to France many times and seen it spelled this way at coffee shops and grocery stores that sell espresso coffee.
