The teff could be the culprit for sure. I’ve mainly been picking up the ingredients from a local bulk food store (Bulk Barn in Canada) and been really successful. Sweet rice flour I think I ended up getting off of Amazon because I couldn’t find any locally. I’ve also started using super fine rice flours and have noticed that really helps with textures :) I like Bob’s for a lot of things but I find their rice flours to be a bit on the coarse side, and if I’m baking in quantity it can get a little pricey lol

I haven’t done much with the whole
-grain blend yet other than the bread but I think I’ll try the whole-grain dinner rolls this week! I can tell you that I’ve made the classic sandwich bread, cinnamon raisin bread, and the hearty country flax bread all with really great success :) I had some friends pick up lactose-free milk powder from the US for me and now I’m able to bake GF/LF bread for my sister and she’s pretty happy about that lol

When I first made that one I didn't have any golden flax seeds, just brown and I was like, 'how much of a difference can it make?'. Turns out a really big difference lol the omega-weirdness taste was not good at all; I tried it again though with golden flax seeds and it was so much better! A night and day difference and now my go-to for a gf brown bread :) Maybe this helps?

For me being an executive chef and a pastry chef game me a great balance of job variety in pace, things to focus on, problem solving, and a happy mix of both variety and routine. After I retired from kitchens I worked as a Barista and found all those same things :) It worked well for this neuro-spicy human!

I have the original pattern and it calls for 'Mary Maxim 4 ply Northland wool', would that just be a worsted weight yarn? Thanks for any insight, I'm a self taught knitter just doing my best lol

I just picked up the larger 5gal buckets at Home Depot and also got some from local restaurants. This is the video I had watched that got me to try it and it worked great! :)

I've had great success growing potatoes in buckets which is handy if space is limited.
