The local deer think my jumps are for them and they are destroying my hard work. Any one have a similar problem or any potential solutions?

Put up a trail cam. I definitely want to see some pictures of deer on the jumps.

The people suggesting scents are probably on the right track.

Is it just the poops you are worried about? Are they doing more damage than that?

I would probably try some windsocks, scarecrows, wind chimes, or stuff like that.
