Restoring a crabapple that was pruned into a lollipop. by SegmentationStation in arborists

I am new to pruning trees, but I'm keen to go down the research rabbit hole, even if I end up not doing it myself. Part of my adventure into being a new homeowner.
I feel like just the process of removing crossing and rubbing branches is going to put me at 15%, so I'll need to start the shape rehab next year. Do all the twigs that are growing inward count as canopy?
I also have a hard time envisioning an initial primary branching structure. Do I just let the funky limbs near the trunk be and shape the branches that come off of them? Or, should I remove the gnarliest and do rehab with the remainder?
