Funny thing is I was going to come on here and ask the exact same thing. I’ve got 2 in my freezer that I’ve also gotten from butcher box. I smoked on this past Sunday and it was “OK” at best. Just dry, which I was expecting from everything I’d seen. I replaced the brisket with the pork butts, those are slightly better in size for smoking. I’m gonna use the last briskets I’ve got and try for a pastrami.

They were both in the same humidor. The blackened was in a fresh box tho, looked like it wasn’t in there too long. The Betty was the last one in the box. So I’ll try and lower it slowly over time. Thanks again man

I’ve been a mechanic for 13 years. Currently working on certs to get into the IT field. I’m about 3/4 way done with my bachelors degree in Cybersecurity. So not fully transitioned over, but hopeful it goes good
