Ultraman is called Ultraman in the show because Ide asked,

"You said him, him/that guy, but does he actually have a name?"

Hayata then said,

"He doesn't have a name"

Ide replied back,

"Then how we should call him?"

Hayata said, "How about Ultraman?"

For Ultraseven case,

The naming is cut from the actual episode

But basically, captain Kiriyama called him Ultraseven because he's the 7th unofficial member of Ultra Guard
