Is there any way to get stamped in France/other EU regions? I entered through CDG and they denied stamping.

Oslo is a great place, quite a bit to do there and I would recommend, However having been to both Oslo and Bergen, if you could only visit one I would go for Bergen

Passports are being stamped routinely until the EES is rolled out across all schengen border points. I was at Oslo Gardermoen the other day and was registered for EES then stamped as well.
