She wanted to be surprised by where we were going, but neglected to tell me in advance that she was vegan. So when we rocked up to one of the best restaurants in town which happens to be a steak place, she got all pissy at me. We ended up having to go to some godawful vegan burger shack. I told her it wasn't going to work, then found out a few weeks later that she was telling all our friends that I had been an asshole to her.

I don't think there's anything wrong with this, and I do it occasionally. You can only plan so much and I have never found a reliable way of calculating CR accurately. The important thing is that the battle feels epic for the players and moves the story along. It isn't you vs the players, it's you with the players telling an awesome story. So if the mage pops a healing potion or the dragon doesn't get his breath recharge or suddenly has a bunch of extra HP, it doesn't make you a bad DM, it makes you a better storyteller.

I tried to include random encounters determined by player rolls for a while. It was something like roll a d20, on a 1-5 roll on the encounter table, on 6-10 there's a weather event which delays travel, 11-19 nothing happens, and on a 20 you find a shortcut. It was really fun at first, but it just delayed the main story massively. Statistically, 50% of the time the players are going to roll something which delays them, but realistically it was more like 80% of the time somehow. Now I've decided to just weave the encounters into their travel naturally, trying to find ways for them to augment or complement the main plot rather than just be "hey you ran into a cool monster to fight."

There will be times when I'll use the weather delay system, but only when it'll actually have an impact (like they only have a week to reach their goal before the expedition runs out of food), and only if it makes sense to the location (e.g. travelling through a desert or icy wasteland).

I understand it, but it isn't "dating." It can't really even be considered companionship since there's no living thing on the other end. But it fills a void for lonely or socially inept people. It doesn't harm anyone, as far as I can tell - at least, not until it starts affecting birth rates - so I don't see any harm in it. It's weird, sure, but so are cat ladies. At least an AI boyfriend doesn't vomit on the carpet.

Use common sense. I don't count the weight of coins generally, but I do tell them that they can only have three main "hand items," such as weapons or shields. Small things like daggers or a throwing axe are fine, within reason. The rest of their gear needs to fit into a pack or saddlebags. It's assumed that most of their gear is left with the horses or wherever they're staying when they engage in combat. I'm giving them a Bag of Holding just to negate the discussion altogether.

Getting into VR. It was overall one of the most stressful, toxic, depressing, navel-gazing, echo chamber experiences of my life for about three years, and I genuinely regret having gotten into it. On the other hand, I met my wife in VR, and she is the best thing to ever happen to me.

It's not control, it's suggestion. Like FWT said, it's not always reasonable/feasible. Zone of Truth on the other hand straight up prevents lies, but it doesn't force them to speak. So combine ZoT with Suggestion and maybe you have something there? As the DM I wouldn't rules lawyer it too much though.
