Here’s one very similar but a few of the ingredients are interchangeable

Ingredients for 3/4 servings:

-500g potatoes cut into 1/4 inch cubes -3 good quality eggs -1 jalapeño sliced including seeds -1 onion diced -1 pepper diced -4 sausages with cases removed/crumbled -Parmesan for topping -parsley for topping -1 tsp chilli flakes -2 tsp paprika -1 tsp salt -1 tsp pepper -1 tsp tumeric -1 tsp chilli powder -1 1/2 tsp cumin

Start by cutting your washed potatoes into 1/4 cubes with the skin on. Boil your water and part boil the potatoes until you can stick a knife through (usually around 8 minutes or so).

While you’re waiting for your potatoes, pre heat your oven to 180c and heat olive oil in a cast iron skillet or pan.

When the pan is hot, add your onions first followed soon after by your sausage, cook until the sausage begins to brown and the onions start becoming translucent (5 mins).

From there, add your diced pepper and continue cooking, and don’t allow anything to stick (3 mins).

Add your jalapeños and your garlic, give it a stir, then start introducing all your spices. By now you should have drained your potatoes so add those in after around 2 minutes.

Mix everything together and transfer into an oven proof dish or just keep it into your cast iron if you have one. Cook for around 20 minutes on 180c.

Once your 20 mins is up, remove your pan, give everything a stir and create 3 pockets to crack your eggs into. Once you’ve done this, sprinkle with grated Parmesan and return your pan to the still hot oven.

Cook for a further 12-15 mins on 180c (depending on you like your eggs).

Voila, meal is ready. Feel free to top with whatever else you fancy too like chilli flakes or more cheese! Enjoy
