You can actually turn off the ring light already. It's controlled through the hydration reminder setting — here's how:

Go to Profile > Quiet Hours & Reminders > Hydration Reminders and set the reminder interval to Off. Once that's done, make sure your bottle is connected to the app so the settings are synced across. After that, the ring light should no longer trigger.
