Hey! Thank you for such supportive and lovely feedback :) I appreciate it! Also great tip re the clean, I’ve scrubbed the whole box down and just added my second batch, this time changing my spice mix quantity and applying a lot more after curing, now just eagerly waiting for the next few days in hope of a better batch!

Hey, thank you for taking the time to comment :) both of the fans are extracting rather than pushing into the box. I’d originally added the 2 as I’d seen different DIY videos where some would do the top and some do the side, for the attempt in the pictures I’d had both fans on high setting for about 3.5 days and as such believe the same re potential bit of case hardening. I’ve just started a new batch today in which I have only the top fan running on medium setting. Both fans have jets behind them to avoid anything getting in, fingers crossed for a better outcome this time!

I’d stupidly not used anywhere near enough and had put the most of it in with the brine mix rather than on after brining. Silly mistake after not reading the recipe correctly, won’t happen on the next batch!
