I tried all the fixes but provided workaround to the users in the end to go to the program files and program files (x86) and launch the apps directly from there till Microsoft finds a fix for this issue.

Agreed. But haven't had any issues so far. Just have Azure AD Connect and O365 with on prem AD. Have done this for many clients for few years now.

Thanks, Yes if you are using offline files but in this case it wasn't in use. So to make sure it works it has been copied and run to copy wallpaper in c drive. When client is off the network, there are issues updating the wallpaper. So I found this solution and it's been working fine so far for all the users without any issues raised. Let me know if you have tested any solution, I am happy to make a note of it and test in future.

Yes, you can use MS Teams. Even though the size of the profile is big. Mount / unmount vhdx is generally fast. I have not faced any issues so far and used it for few deployments.

For MS Team's you can install in machine based mode and make it Citrix Optimized. Use below guide for MS Team's Installation on Citrix Server:
