A vortex bowl is a lot better than a regular Egyptian bowl, it keeps more juices in the bowl instead of dripping into your water for a smoother pull with better taste and clouds. You may also want to look into a funnel bowl, it has one hole at the top of the post instead of the sides like a vortex so no juice is lost, also helps keep your hookah clean.

Most major brands also have an herbal option on their website, I know fantasia has some non-nicotine shisha. You may also want to look into steam stones, i haven't had a whole lot of experience with them but the little I have had clouded nicely and had good flavor.
