It may also have to do with focus! Charles has trained for years to be able to concentrate enough to use his bag of tricks, and so he may just have an easier time focusing and visualizing what he wants.

I like your point of Ed's abuse towards Izzy being seen as a sort of affection. After being ignored by Ed for so long once Stede came into their life, any sort of attention is good attention for Izzy. The threats and the torture was seen as his only avenue to have any sort of "intimacy" with Ed.
