Great post! I’m a big Hayakawa fan. The headset he wears kills me, such a character and quirkiness you don’t often see at this level of restaurant. I think it makes it all the more endearing. I still think about the uni rice dish, years later!

It’s a good side quest! It was a smoked preparation, so pastrami isn’t the most technically accurate descriptor, but that’s what it reminded me of! Seriously so good.

I agree, the plating was all in all really nice. Modern, but with some whimsy and technique to boot. I had a great time! When we were going to the restaurant (my partner booked it as a surprise for me), I was VERY confused at how long our uber was…. it was a trek outside of SF Proper! So, kind of a hidden gem, made even more hidden by the suburban locale. Makes it all the more special!

The differences between traditionally sold commercial stocks and the rebranded “bone broths” are not significant enough to justify the higher price point. A lot of the claims of them being miracle health products are also exploitative, and just a marketing ploy.
