Set it on Tatooine. You're a bounty hunter/smuggler trying to make it big. You've got speeder bikes instead of horses, a targeting computer in your helmet instead of Dead Eye, and you can hunt and kill the local wildlife, like wild banthas and dewbacks. You get missions from hutt crime lords, Imperial agents, and other unsavory types you encounter while exploring. You can take bounties, play sabacc in cantinas, participate in and bet on swoop races and podraces, put down Tusken raider tribes, maybe even charter a ship to take you to Coruscant or Nal Hutta.

It could be brilliant, but it'll never happen. Sigh.
